I didn’t feel like doing much of anything today except watch football. I spent very little time on the computer and napped a lot. However, one thing I did do, because it always makes me happy, is cook. Nothing fancy or hard, just tasty food that will be dinner all week long!
First up was Beef Enchilada Casserole. No recipe really, just browned up some ground beef, added some spices and layered in a casserole dish with canned enchilada sauce, cheese and corn tortillas. Baked for 1/2 and hour at 350 F and Oh my was it good!
The real treat though was the Chicken Cordon Bleu Mac And Cheese that I put together. I am always looking for different ideas about what to add to Mac and Cheese. I’ve tried vegetables, sausage, pepperoni and so many others. The other day I saw a recipe for a Chicken Cordon Bleu Casserole and gave me the idea of using chicken and ham in my Mac and Cheese and swapping out the usual cheddar cheese with swiss. Let me tell you something! Best Mac and Cheese combo I made in a long time! I mean, just look at this.
You can do this too! Just make your favorite Mac and Cheese and add sauted chicken bites and little pieces of ham. Oh, don’t forget to swap the cheddar and add swiss instead. Here’s the real secret though… Use a cup of white wine instead of all that milk you usually put in.
