Cheesy Potato Stuffed Meatloaf

Long before Dish on Chefs, I was cooking and dreaming up recipes. This one was one of my favorites. Super easy too! Scalloped Potato Stuffed MeatloafJust make up your favorite meatloaf. Divide the mixture. Put half in the pan and then layer in sliced potatoes and your favorite thick cheesy sauce. Cover it and tuck down the sides of the remaining meatloaf and bake. Oh so yummy! (If you parboil the potatoes, it won’t take as long to cook and you will be guaranteed the potatoes will be tender.)

Instructions
  1. Peel, slice and boil potatoes for 5 minutes. Drain and set aside to cool.
  2. Soak white bread in 1/3 cup of the milk.
  3. In a large mixing bowl, combine the eggs, soup mix and milk soaked bread. Salt and pepper to taste.
  4. Add in the meats and mix thoroughly, making sure the bread is broken down and well distributed throughout.
  5. Divide the meat mixture and press half of it into the bottom of a loaf pan. Try an leave a bit around the edges and a depression along the center to make it easier to close up the sides of the loaf.
  6. Make the cheese sauce by adding the butter and flour in a small sauce pan and combine to make a Roux. Cook the mixture over medium heat for a few minutes.
  7. Add in the cup of milk and stir until the sauce starts to thicken. Do not boil.
  8. Add in the cream cheese and cheddar cheese and stir until melted and the sauce is fairly thick. Set aside.
  9. Place a layer of the cooled potatoes in the center of the meatloaf, then pour on about 1/3 the cheese sauce. Another layer of potatoes, more sauce and repeat a third time.
  10. Press the remaining meatloaf mixture on top and spread out to cover all the potatoes. Work the edges down around the potatoes until it connects with the mixture under the potatoes.
  11. Bake in a preheated 375 degree oven for 45 minutes to an hour.
