Eggs Goldenrod with Crispy Ham Strips

When I was a young boy, my mother taught me to make this simple dish. It has wonderful flavor and goes great with sausage, bacon or ham.

I have made this for my own children on many occasions and it is one of their favorites too. It makes a great breakfast, lunch or dinner!EggsGoldenrod

Ingredients
  • 1 1/4 cup milk I use 2% but any one will do.
  • 2 tbsp flour
  • 2 tbsp butter
  • 2 large eggs
  • 1 dash nutmeg

Instructions
  1. Hard boil and peel two large eggs. Slice them in half and reserve the yolk. Break the whites into bit-sized pieces.
  2. Melt 2 tablespoons of butter in a saucepan and add 2 tablespoons of flour. Let it cook for a minute or two to reduce the raw flour taste.
  3. Add the milk and continue to cook over a medium heat until the sauce thickens then turn off the heat. Add a dash of nutmeg. Salt and Pepper to taste.
  4. Add the broken up egg whites to the sauce. They will warm back up while you wait for your bread to toast. Place your toast on a plate and spoon over the creamy egg sauce. Crumble the egg yolk over the top.
  5. Fry up your sausage, bacon or ham and serve on the side. Enjoy, it really is delicious!
